Happening 24th to 30th June 2019, Negroni Week is a global initiative by Campari and Imbibe Magazine to raise funds for causes by, naturally, drinking more Negronis. Since its inception in 2013, nearly $2 million dollars have been raised from the participation of 10,000 establishments across 87 countries. This is the campaign’s fifth anniversary in Singapore, and here’s the first wave of participating bars and bartenders around the city with their take on the classic cocktail.
A rising star of Singapore’s cocktail scene, Demitria Dana Paramita’s CLASSY’80 ($23++) lives up to its name and the sophisticated bar at Fairmont Singapore. Replacing vermouth with house-made Sangria, alongside The Botanist Gin and Campari, this is going to be one crisp, yet elegant take on the Negroni.

Made with rum, Campari, Pedro Ximenez, tropical juices, as well as clarified saffron milk, it’s almost as if Gary Kang at Caffe Fernet created the Golden Negroni ($22++) through the rose tinted sunnies of the Italian Rivieria. Perfect for those who aren’t a fan of strong, bitter tipples, this goes down incredibly easy.

Chihuly Lounge, located at The Ritz-Carlton, isn’t merely another hotel bar. Noted for their High-Tea sets, it comes with little surprise that they’re introducing Coffee & Cocktails – a novel concept that pretty much says it all. Martin Villareal’s Cafe Negroni ($22++) is amalgamated with Campari, Rosso Vermouth and Gin, alongside – you guess it, uniquely blended roasted coffee beans. It not only brings out the sweet and tangy notes, but also the smoky aroma that’s hard to resist.

Clinching the 41st spot on Asia’s 50 Best Bars this year, Employees Only delivers a slice of the Big Apple to Singapore. Here, don’t anticipate any sorts of frills as you know what they say – nothing is better than the original. Michelle Ang’s Negroni ($25++) thus embraces no-nonsense simplicity that’s a mixture of the original 3-ingredient: Campari, Gin and the bar’s house-made Sweet Vermouth.

JAM at Siri House
Nestled away in the quaint Dempsey Hill, JAM at Siri House oozes luxurious vibes with its Art Deco interior. Bartender Kavinn Raaj will be whipping up a cocktail that’s truly a fruity delight. The Port of Call ($20) is suitably invigorating for our sultry weather as White Port replaces Sweet Vermouth to invite a drier and lighter sweetness to the palate. Besides a topping of Salted star moss, hops-distilled Gin finishes the drink, complementing its already floral bouquet.

Despite being dropped off the list of Asia’s 50 Best Bars this year, Nutmeg & Clove is nonetheless the place to go for avant-garde cocktails. For the week, get rid of the notion that you can’t drink alcohol in the morning (take our words with a grain of salt!). Swap your cup of coffee with Jayden Ong’s Rockstar Breakfast Negroni ($20++) that’s mixed with Strawberries Sous Vide Gin, Coffee Vermouth and garnished with Milo Yogurt for an added touch of comfort.

Potato Head Singapore
Potato Head Singapore does not require any introduction with their serving of scrumptious burgers and hosting of rooftop parties. By delving into the pop culture world, bartender Lakeshwaran Kasi has named his cocktail after the legendary Freddie Mercury from Queen. The Freddie MER-Curry ($20++), as you might have guessed, presents Indian culture with its curry leaves-infused Campari and raisin Gin. Aside from its fabulous pun, the drink is sure to pack a punch.

Italian restaurant Publico Ristorante’s Donna Fatale ($25++) is set to take you back to the Film Noir period and experience sensuality in black-and-white. Crafted by Woody Goh, the cocktail is above being labelled as a gentleman’s or ladies’ drink. Amaretto and Khalua injects both sweet and woody flavours that balance out the bitterness of the classic Negroni ingredients, while twisted orange peel and caramelised almond cracker provide that finishing touch.

A sky high bar sitting charmingly on the 70th floor of Swissotel The Stamford, SKAI Bar presents a Negroni with a regional twist – Eastern Forager ($25++), alongside panoramic views of the city’s skyline. Bartender Rusty Cerven, who’s inspired by local flavours, utilizes The Botanist Gin infused with Chrysanthemum and Vermouth with Shiso. Combined with Campari, the cocktail doesn’t divert away from tradition yet possesses that special edge to stand out from the crowd.

Jufri Jasmani’s The Mediterranean Negroni ($20++) speaks for itself, embodying the coastal spirit of Italy and Spain with its fruity fusion of Raisin-infused Campari, Orange and Grapefruit bitters, in addition to Fresh Grapes and Dried Orange Peel as a garnish. It’s vibrant in both its aesthetics and flavours, and you’ll be quick to fall in love.

The sister venue of Asia’s Best Bar, you know that The Old Man Singapore is well-qualified to serve a splendid Negroni that knocks it out of the park. The Final Straw ($22++), a wordplay inspired by the bar’s sustainable efforts of eradicating plastic straws, is crafted by Louis Tan. The cocktail very much adheres to the classic ingredients, but Strawberry Gin is redistilled to introduce a hint of sweetness that neutralizes the bitterness of Campari.
